做茄子打卤面,只需加一勺“它”,又香又入味,好吃到汤汁都不剩茄子是我家夏天吃的最多的蔬菜之一,因为现在都提倡吃当季蔬菜,在夏天可以买到本地户外种植的新鲜茄子,而且价格特别便宜。小编今天去市场买了2个茄子,一斤只要1块钱,你们那里是不是也这么便宜呢?茄子味甘、性凉,有清热解暑的作用,在夏天人们很容易因为天气的原因导致上火,多吃一些茄子可以可以有效预防上火。茄子的做法很多,可以红烧、凉拌、清蒸、真的是为数不多的全能食材。红烧茄子太油腻,我家夏天很少会吃,凉拌茄子、蒸茄子家人都不是太喜欢吃。茄子打卤面是我家夏天最常见的茄子吃法,做上一盆茄子卤,煮上一锅面条,浓浓的茄子卤拌着面条吃,特别舒服。下面小编给大家分享“茄子打卤面”的做法,好吃的关键就在卤的炒制。【茄子肉丁打卤面】食材:圆茄子一个、五花肉100克、黄豆酱一勺、蒜薹50克、葱花适量、蒜片适量、八角两颗。(茄子最好选用新鲜的嫩茄子,质地紧实的口感相对比较好。)做法:1、圆茄子去皮切成1厘米见方的小丁,五花肉去皮剁成肉末,蒜薹洗净切成小丁。2、锅里坐油,油热后下入五花肉末煸炒,炒出五花肉中的油脂后下入葱花、蒜片、八角继续煸炒出香味。3、炒出香味后加入一勺黄豆酱、少许老抽翻炒均匀,炒出酱香味。4、然后加入茄子丁,转为中小火慢慢煸炒,把茄子炒熟。(一定要把茄子炒熟再加水,否则做出来的茄子卤可能会有生茄子味。)5、茄子炒熟后加入适量热水,大火烧开后加入盐、鸡精调味,加入蒜薹丁,煮2分钟。6、最后淋入水淀粉勾芡,收汁至汤汁粘稠即可。7、锅里坐水,水开后加入少许盐和食用油,下入面条煮熟后捞出。(煮面时加一点食用盐和油可以使面条更加劲道爽滑。)8、夏天吃面条还是用凉白开过一下比较舒服,最好不要使用自来水过凉。最后浇上茄子肉丁卤就可以开吃了。最后说几句:1、茄子要选用新鲜的无籽茄子。2、茄子一定要炒熟再加水。3、加入黄豆酱后要炒一下,炒出酱香味。
