随着我国经济的持续快速发展,作为第三产业市场化程度最高而竞争又最为激烈的餐饮业,又一次迎来了她的发展高峰期。过去10年,是我国餐饮业蓬勃发展的黄金时期,整个行业经历了从无序到有序,从小草到参天大树的逐步发展壮大。餐饮业在国民经济中的比重,从无足轻重的位置飞速增长到年营业收入上千亿元,已成长为我国经济发展不可忽视的重要力量。但是,因为市场的巨大,也吸引了更多的人前来分食餐饮这块大蛋糕。于是乎,各路诸侯,八仙过海,各显神通,南征北战,攻城略地,以求用最快的速度占领最大的市场份额。正所谓“你方唱罢我登场,各领风骚一两年”。综合目前现状,在改革开放的大环境下,餐饮市场已日趋成熟,并逐步成长起一批有规模、有实力,而且具有持续发展的现代化餐饮公司。在未来一段时间内,他们仍将会是餐饮业发展的中坚力量。伴随着2008年北京奥运会和2010年上海世博会的举办,我国经济必然会迎来一个飞速发展的阶段。毫无疑问,顺势而为,餐饮业又将会登上一个新的台阶。面对未来,我们满怀信心。餐饮业将会有怎样的发展趋势呢?在此,笔者做出展望,以求抛砖引玉,吸引更多的有识之士来进行研究。一、商务餐成为个热。伴随着我国经济的发展,各类商务人士在外用餐会逐步增多,会议餐和商务宴请将会成为又一个增长点,并且还会呈现出两极分化的可能,高档宴请和商务用餐都将会有极大的发展前途,形成齐头并进之势。二、旅游休闲餐饮将会逐步升温。这从最近几年“五一”和“十一”黄金周可以看出来。业界经济组织曾经做出预测,到2020年,我国将会成为世界第一旅游大国。可以预见,随着人们消费水平的不断提高和旅游热的持续升温,旅游用餐和休闲用餐将会有更大的发展。三、中式快餐将走出低谷,并且会逐步占有相当的市场份额。经历了10年的卧薪尝胆之后,中式快餐已经有了一定的规模,相信他们会吸取以前的经验和教训,在应对西式快餐挑战的过程中,逐步发展并成长壮大。四、高档消费将会趋于理性,家常菜将持续流行。最近几年,燕、鲍、翅、参等高档菜品可以说是火遍了大江南北,一度给人留下了“旧时王榭堂前燕,飞入寻常百姓家”的印象,可是从价位上来看,能消费得起的人毕竟是少数。在经历了最初的辉煌之后,目前市场上经营燕、鲍、翅、参者鱼目混珠,加之高档消费日益趋于理性,将会导致经营状况不佳者退出市场。而家常菜由于迎合了人们的消费心理和口味习惯,且价位低,大众化,能很好地满足工薪阶层和城乡居民的饮食需求。我们有理由相信,家常菜定会拥有一个比较稳定的消费群体,并将持续火爆下去。五、天然、绿色、健康和保健食品将会越来越被人们认可和追捧。随着人们生活水平的提高,各个年龄段的消费者都将会注重饮食营养和饮食健康。老年人希望通过饮食调节,达到健康长寿的目的;父母们希望通过饮食调节,使自己的孩子更聪明伶俐、健康活泼;中年人、白领阶层更希望通过饮食的调节,缓冲工作压力所带来的不利影响,达到提神醒脑、精力充沛的目的。一些“三低、两高、多素”(即低脂肪、低盐、低热量、无胆固醇,高蛋白、高纤维,多种维生素、微量元素、矿物质)的食品及天然野生菌类,绿色及黑色食品将成为人们饮食的首要选择。六、连锁经营经过淘汰会有更大的发展。特许经营加盟连锁进入中国市场是近几年的事,但在短短的时间内已经有了长足的发展。而目前的市场情形则比较混乱,有一些店开张一两年,没有一点实力就想搞连锁,结果是连的越多,“死”得越快。而现在又到了争夺市场份额的时候,随着一部分没有连锁能力、管理混乱的连锁公司逐步退出市场,一些有实力、管理好的优秀的连锁企业定会成长起来,共同把餐饮市场做大做好,促进餐饮业的繁荣。综上所述,在未来几年内,餐饮业将会走上快速、健康发展的快车道,但市场的残酷竞争,将有一批不适应市场竞争的企业会被逐步淘汰,取而代之的是会诞生一批竞争力强、有发展前途的现代化餐饮公司。市场风云变化莫测,餐饮业要持续稳定地发展,还就需要我们业内人士的共同努力,及时总结经验教训,把自己的企业做大做强,把餐饮企业向规范化和现代化的方向推进,使我国的餐饮业取得更大的发展,迎来更加美好的明天。
