紫米米粒细长,颗粒饱满均匀。外观色泽呈紫白色或紫白色夹小紫色块。用水洗涤水色呈黑色(实际紫色)。用手抓取易在手指中留有紫黑色。用指甲刮除米粒上的色块后米粒仍然呈紫白色。煮食纯正的紫米晶莹、透亮,糯性强(有粘性),蒸制后能使断米复续。入口香甜细腻,口感好。
可放在干燥、密封效果好的容器内,并且要置于阴凉处保存即可。另外可以在盛有紫米的容器内放几瓣大蒜,可防止紫米因久存而生虫。
