洋葱对温度的适应性较强。种子和鳞茎在3～5℃下可缓慢发芽，12℃开始加速，生长适温幼苗为12～20℃，叶片为18～20℃，鳞茎为20～26℃，健壮幼苗可耐6～7℃的低温。

鳞茎膨大需较高的温度，鳞茎在15℃以下不能膨大，21～27℃生长最好。温度过高就会生长衰退，进入休眠。

洋葱属长日照作物，在鳞茎膨大期和抽薹开花期需要14小时以上的长日照条件。在高温短日照条件下只长叶，不能形成葱头。洋葱适宜的光照强度为2万～4万勒克斯。
