我们在自制橄榄菜的时候，需要把橄榄熬煮30分钟，晾凉去核，切细备用，然后放入锅中压开后15，20分钟关火，冷却后倒掉水备用把梅菜叶也同样到高压锅煮，压开后8分钟关火既可以了。

橄榄是潮汕人喜欢的水果之一，装在小盘子里，放在茶几上，来往宾客会调侃一句“新春如意，橄榄粒来试”，接着信手拣出一颗放进嘴里。
橄榄菜（kale borecole）是广东潮汕地区风味小菜，属粤菜系。取橄榄甘醇之味，芥菜丰腴之叶（咸菜尾）煎制而成。橄榄菜食之开胃消食，帮助消化，增进食欲。
关于橄榄菜，有一个民间传说：每年夏天，肆虐的台风刮过之后，橄榄林子里总会落下一地的橄榄花。橄榄花就是尚未成熟的青橄榄，这时距离秋冬的采摘期尚远，橄榄果个小色青肉嫩核稚，吃起来粘稠味涩。有一位巧媳妇，舍不得让橄榄花在地里烂掉，就拾了一篮回家熬煮。因为旧时每家每户都有一个咸菜瓮，瓮头（上面）总堆放着一些咸菜尾（叶），巧媳妇便将这些咸菜下脚料也取出来洗净切碎，放进生铁鼎（锅）里与橄榄花同煮。
她的本意，只是将废物利用起来，留着以后慢慢食用。不想奇迹真的出现了，乌橄榄菜就此诞生了。
最近是产橄榄的季节，买些橄榄回来，自己做橄榄菜，过程简单易学，大伙动手做出来来馋一下朋友，晒下盆友圈吧。
