十几年前第一次去美国,一天晚上和几个在美国生活多年的华人同事到中餐馆吃饭,桌上有一道鱿鱼,邻桌的几个老美没有见过,很好奇的问我们吃的什么。那时候我的英文应付专业还凑合,衣食住行词汇量有限,自然是答不上来。没想到那几位在美多年的同事也不知道鱿鱼的英文单词,只得说是一种seafood。老美听了连声称奇,原来他们看切过花刀的鱿鱼造型别致,还以为是什么甜品。现在回过头想想,那几个老美也许只是没见过中餐里面鱿鱼的做法,一时没有认出来,倒不是真没吃过鱿鱼。这些年在北美生活的经验来看,鱿鱼在各式餐厅的菜单中并不少见,而且名称和做法不一而足。 Calamari是菜谱上很常见的食材。英文中墨鱼叫做squid,鱿鱼则是calamari。二者的区别主要是squid通常用来指墨鱼这种动物而calamari主要是指用作食物的鱿鱼。Squid这个字在菜单上出现不是没有,但是很少。当然也有很多人讨论calamari和squid到底是不是同一种东西,就像中文语境中也经常有人讨论墨鱼和鱿鱼到底是不是同一种东西在不同地区的名称。英文中calamari这个字其实是鱿鱼的意大利文名字,在英文中多用来指称做成菜的鱿鱼,很多时候甚至专门指炸鱿鱼(fried calamari)或酥炸鱿鱼(crispy calamari)。 这个一般是做前菜(appetizer),在意大利餐厅、希腊餐厅和各式海鲜餐厅都很常见。在许多美式餐吧(bar & grill)、运动酒吧(sports bar)和类似大排档的food court它是下酒的好东西,这种店一般分量都给得很大,差不多也就当顿饭了。 炸鱿鱼有的切成小块,有的切成鱿鱼圈,裹一层用面粉、玉米淀粉(corn starch)加调料配成的糊,再滚一层面包屑,温油炸上一两分钟就好了。像其他海鲜一样,吃的时候配柠檬。这一点中餐和西餐倒是有相似之处,吃海鲜配酸的东西提鲜,只是中餐蘸醋,西餐里面很多时候用新鲜柠檬直接把汁挤在菜上当醋用。常见的蘸料(dipping sauce)有几种,Tabasco是带很强酸味的辣椒酱,很稀,像辣椒水多过像辣椒酱。我怕酸,不喜欢这个蘸料。另外一种红色的是用番茄调的Marinara sauce,意大利餐厅一般用新鲜番茄加新鲜香料做,美式酒吧就用番茄酱(ketchup)。还有一种吃油炸前菜特别是鱼类菜式常见的Tartar sauce是白色的,用美乃滋(Mayonnaise或简称mayo)做底,加洋葱、油、醋、酸黄瓜丁和各种香料调成。 除了炸,烤鱿鱼(Grilled calamari)也会出现在前菜里面。Grill一般是明火烤,有点像国内的炭烤鱿鱼,不过好像很少见老外有单烤鱿鱼须的。有的餐厅里面还有Grilled calamari salad,就是蔬菜沙拉,面上放了几块烤好的鱿鱼。 虽然少见,也有餐厅的菜单上把鱿鱼叫做squid的。有一种黑色的意大利面(pasta)是加鱿鱼的墨汁和面做成的,菜单上提到这个鱿鱼的时候倒是几乎都用squid这个词的,叫做squid ink pasta,没见过calamari ink pasta,大概是强调墨鱼的动物性而不是鱿鱼的食物性,因为只有活着的动物墨鱼才能制作出这种墨汁。这个面常加海鲜一起做,少不了会看见squid ink pasta with calamari。另外,墨鱼仔倒是可以叫做baby squid,见过超市里有卖的,很少看到餐厅的菜单上有这个东西。 至于ocotopus,体型比较小,青岛叫做八爪鱼,有些地方叫章鱼。虽然国内近年流行日式章鱼小丸子,但英文菜单中极少见到这个词。Cuttlefish是墨鱼、乌贼、八爪鱼一类的统称,我从没在菜单上见过这个词。 另外,Calamari这个词在不同语言中拼写大同小异,法国餐厅里面它叫做Calmar,希腊语写成Kalamari,如果吃加勒比拉美餐厅,西班牙语里面叫做Galama或者Calamares。所有这些词都是从拉丁文的Calamarium变化过来的,拉丁文中它的本意是墨水桶。
