佐料: 1.胡萝卜一根 2.大葱一或两根,视粗细而定 3.青椒一或两个,试是否喜欢而定。 4.姜一块 5.盐 6.色拉油 主料: 大鱿鱼两条,正常颜色为外面灰色有点泛红,里面白色有光泽,肉质韧而不硬,气味鲜咸腥,最好不要水发的,太软的,焦黄的,透明的,发臭的-_-||||……。 炊具:炒锅及锅铲 能源:煤气或电 其他用具:大剪刀,漏勺,菜刀菜板 制作过程: 1.处理鱿鱼 :洗一下先,表面可能有泥沙,触手的吸盘较硬,可以洗掉。找到鱿鱼脖子(领会精神吧-_-||||),插进剪刀,把鱿鱼身体纵行剪开,可见鱿鱼头之下的内脏,与肉板仅有一线之连,一手抓住鱿鱼头,一手抓住鱿鱼肉板,一扯就可以完整扯下,用剪子齐头把内脏剪下,扔掉。鱿鱼眼睛挖掉,嘴(触手中间的鹦鹉嘴似的硬物)挖掉,用菜刀把头切开,按两三个触手一块的大小来切,切完之后在每根触手上轻轻拦几刀,不要切断。鱿鱼肉板内面(白色的一面)朝上,展平。改刀方法:刀面倾斜与菜板成60度,平行于鱿鱼脖子的边缘开始切,每刀之间间隔3mm左右,要切得够深但不能切断,把整片肉板切完后逆时针旋转30度,同样手法开始切,但是可以切的没有那么深。整片切完后再转回原位,顺第一次切的方向把肉板切断成宽大约3公分的肉片,然后在垂直方向把肉片长度切成4-5公分,也可以更短。(喘口气,坐一下……头有点晕……-_-||||) 2.用开水焯鱿鱼,一次不要放太多,用漏勺装大概七八片,放在滚水里晃几下,鱿鱼就会卷成漂亮的肉卷,就可以捞出。鱿鱼爪子单放在一起焯,时间稍长。焯后沥干。 3.几样佐料洗净(盐当然不用洗!!-_-+|||),全部切丝或者全部切片。如切丝:姜4-5片即可,切丝;胡萝卜斜着切成5公分的长片后切丝;大葱的葱白拦成5公分的段后切丝;青椒切成尽量细的丝。切片:姜切4-5片;胡萝卜斜着切成长3-4公分的片,大葱的葱白拦成3-4公分的段后破成四半(即纵切一刀为两半,再各自纵切一刀);青椒掰成大概胡萝卜片大小的片。 4.炒锅烧干烧热放大约3汤匙色拉油。中火偏大,烧大约半分钟(不懂几成热是怎么说的……-_-||||)后放姜,然后放入胡萝卜和青椒翻炒(若是切片的,葱也这时候放),大约2分钟后见略熟(部分透明的趋势),放鱿鱼,翻炒3-4分钟,放适量盐,放葱,大火翻炒半分钟,出锅。 注意事项: 1.标准状态:望:鱿鱼肉莹白饱满,颗颗肉刺精神抖擞,好象白色的小刺猬,间或有灰红色的卷曲成团的触手,好象奇形怪状的蜗牛。胡萝卜红艳油亮,青椒青翠欲滴,大葱洁白夹一点翠绿。会有少少的一点肉汁。闻:鲜香。尝:香甜鲜美。鱿鱼够嫩够韧,海鲜的味道(不会形容,反正就是好吃!-_-||||),蔬菜甜脆,还有葱香味呢~~~~ 2.焯鱿鱼千万不要煮太久……烫到卷起来就好了,不然会老!! 3.鱿鱼焯过之后切记把水沥干!!我们是‘爆炒’鱿鱼,而不是水煮鱿鱼……-_-|||| 4.如果不是新鲜鱿鱼而是冷冻的或者喜欢吃辣的,建议把青椒换成尖椒或者加干的红辣椒。 5.小心切手!!!-_-|||| 6.本品为吾家传手艺,非关键时候不轻易露的,故请勿外传。
