Some Breakfast Dishes 早餐食谱Breakfast in a restaurant is a very enjoyable experience.If you order eggs in a restaurant,the waiter/waitress will ask you how you want them .You can reply that you want them "scrambled(炒)"or "boiled".It is not sufficient,however,to ask for them "fried"you will have to specify whether you would prefer them "sunny-side-up"(煎一面),"over"(两面煎),"over-easy/easy-over"(两面煎,但蛋黄仍然呈流体状). American sausage(香肠)comes in slices and is quite spicy.But you can also have link sausage. American bacon comes in small strips,can be rather fat,and is served crispy.It is usually very tasty,and you can eat it with your fingers. "Hash brows"(油炸土豆片)are shredded(切成碎片的)and fried potatoes.They are wonderful,especially with fried eggs and ketchup(蕃茄酱). "Pancakes",sometimes called "hot cakes",are made with baking power.They are normally served in a pile,and you are supposed to put butter and syrup(果浆)on them. "Jelly"(果子冻)is jam and includes grape jelly,which is very tasty. Toast is often served already buttered. 各国用餐礼仪大不同
1. SEATING ETIQUETTE
Your host may have seating arrangements in mind, so you should allow him to direct you to your seat. As the host, you should suggest the seating arrangements. In a restaurant, the guest of honor should sit in the best seat at the table. Usually that is one with the back of the chair to the wall. Once the guest of honor's seat is determined, the host should sit to her left. Other people are then offered seats around the table.

2. NAPKIN ETIQUETTE
At informal meals, place the napkin in your lap immediately upon seating. During formal occasions, before unfolding the napkin, wait for the hostess to remove her napkin from the table and unfold it in her lap.

3. FOOD SERVICE ETIQUETTE
During service of a formal dinner, the food is brought to each diner at the table; the server presents the platter or bowl on the diner's left. At a more casual meal, either the host dishes the food onto guests' plates for them to pass around the table or the diners help themselves to the food and pass it to others as necessary.

4. THE TABLE SETTING
Deciding which knife, fork, or spoon to use is made easier by the outside-in table manners rule – using utensils on the outside first and working your way inward.
餐具的使用顺序有点复杂,比如吃沙拉的刀叉和吃牛排正餐的刀叉是不一样的。喝汤和吃甜品的勺子也是不一样的。基本上从大小就可以分辨。但是小旋子觉得与其记这么复杂的东西,不如在用餐的时候,很礼貌的问服务员:It's my first time to dine in a high end restaurant. I am so confused about all these table settings. Can you please tell me which one I should start with?
5. WHEN TO START EATING
At a small table of only two to four people, wait until everyone else has been served before starting to eat. At a formal or business meal, you should either wait until everyone is served to start or begin when the host asks you to.
咱们国内的风俗也是差不多,等人齐了再点菜,再开动。美国是,等每个人各自点的菜都上齐了,再开动。
6. HANDLING UTENSILS
The continental table manners style prevails at all meals, formal and informal, because it is a natural, non-disruptive way to eat.
Hold your fork in your left hand, tines downward.
Hold your knife in your right hand, an inch or two above the plate.
Extend your index finger along the top of the blade.
Use your fork to spear and lift food to your mouth.
If your knife is not needed, it remains on the table.
7. PASSING THE FOOD
Pass to the right. One diner either holds the dish as the next diner takes some food, or he hands it to the person, who then serves herself. Any heavy or awkward dishes are put on the table with each pass. Special rules apply topassing salt and pepper and passing bread and butter.

8. RESTING UTENSILS
When you pause to take a sip of your beverage or to speak with someone, rest your utensils by placing your knife and fork on your plate near the center, slightly angled in an inverted V and with the tips of the knife and fork pointing toward each other.
9. MEALS END
At a formal affair, plates are removed by a professional staff. But as most informal meals are served without help, the hostess clears the plates, often with the help of a guest or two. At a family meal, members clear their own plates.

10. GET THE BILL
After you and your friends finish your food, you can go ahead and get your bill. Just say to the waiter/waitress: Check, please./Can/May I please have my check/bill?

西餐刀叉礼仪1
刀叉的摆放
首先,主菜盘Dinner Plate叠在汤底盘Soup Plate上并放在餐位中间,折叠规整的餐巾Napkin放于主菜盘上。其次,刀Knife与汤匙Soup Spoon放在食盘右侧,叉Fork放在食盘左侧,刀叉的数量是与菜式的数量是相等的,并按上菜的顺序由外向内排列,所以摆在最外侧的刀叉或汤匙用于前菜,中间的刀叉Fish Knife and Fish Fork用于吃鱼,最靠近食盘的刀叉Dinner Knife and Dinner Fork用于肉类主菜。但有时会遇到左右摆着不同件数的刀叉,通常是叉的数量多余刀的数量,这表示多出来的叉是单独使用的。
接着,在食盘的上方排放的是甜点餐具Dessert Setting。靠内的是点心叉Cake Fork,用于食用 蛋糕 ,叉齿朝右,叉柄朝左。靠外的是点心匙Dessert Spoon,用于食用冰淇淋,勺头朝左,勺柄朝右。然后在餐位的左上方是面包盘Bread Plate与黄油刀Butter Knife,黄油刀放于面包盘上方,刀刃朝左,刀柄朝右。在餐位的右上方至少有三种玻璃杯,从左到右依次是水杯Water Glass丶红酒杯Red Wine Glass丶白酒杯White Wine Glass。
最后,在甜点餐具的上方可能放有黄油盘Butter Plate丶调料Salt and Pepper Shaker及面包篮Bread Basket。餐具中所有的刀刃Blade都朝里摆放,叉齿Tines和匙心向上摆放。越高级的餐厅,这些餐具的摆放越齐全。
西餐刀叉使用礼仪
1.右手持刀或汤匙,左手拿叉。
2.两把以上,应由最外依次向内取用。
3.刀叉轻握尾端,食指按在柄上。
4.汤匙则用握笔的方式拿。
5.如果觉不方便,可换右手拿叉,但更换频繁则显粗野。
6.吃较大的蔬菜,可用刀叉来折叠、分切。
7.软食物可放在叉子平面上,用刀子整理一下

西餐用的刀、叉、勺各有其用,不能替代或混用。
1.刀 是用来切割食物的,不要用刀挑起食物往嘴里送。记住:右手拿刀。如果用餐时,有三种不同规格的刀同时出现,一般正确的用法是:带小小锯齿的那一把用来切肉制食品;中等大小的用来将大片的蔬菜切成小片;而那种小巧的,刀尖是圆头的、顶部有些上翘的小刀,则是用来切开小面包,然后用它挑些果酱、奶油涂在面包上面。
2.叉 左手拿叉,叉起食物往嘴里送的,动作要轻,捡起适量食物一次性放入口中,不要拖拖拉拉一大块,咬一口再放下,这样很不雅。叉子捡起食物入嘴时,牙齿只碰到食物,不要咬叉,也不要让刀叉在齿上或盘中发出声响。
3.勺子 在正式场合下,勺有多种,小的是用于咖啡和甜点心的;扁平的用于涂黄油和分食蛋糕;比较大的,用来喝汤或盛碎小食物;最大的是公用于分食汤的,常见于自助餐。切莫搞错。
第3步:餐具的摆放 餐具的摆放是根据上菜先后顺序从外到内摆放。有的菜用过后,会撤掉一部分刀叉。刀叉放的方向和位置都有讲究。刀叉放在垫盘上呈八字形,刀口朝内,叉尖向下就表示你还要继续用餐;刀叉平行摆放在垫盘上刀口向处,叉尖向上则表示你不要用餐。汤勺横放在汤盘内,匙心向上,也表示用汤餐具可以収走。

吃西餐使用刀叉的礼仪常识
1、左叉右刀。西餐最基本的礼仪是正确使用刀叉,一般是左手持叉,右手持刀,由上方握住刀与叉,两手食指按在刀叉上使用。简单讲是用右手拿刀把食物切开,然后左手拿叉将食物叉起。以叉子压住食物的左端,固定,顺着叉子的侧边以刀切下约一口大小的食物后,叉子即可直接扎起食物送入口中。
2。正确的姿势和适当的角度。面对西餐时端正坐好,将肩膀与手腕放松,两臂贴着身体,手肘不太过高或过低,刀与餐盘的角度保持在15度左右。两侧手肘过高会使刀叉角度过大,而呈直立状态;相反地,如果手肘过低将使刀叉呈倒下状态,没有办法好好地将食物切开。
另外注意,将刀子拉回时不可用力,而是在往前压下时用力,这样才能利落地将食物切开。刀与叉也不可以过分倾斜,叉子可依食物的特性,自由地变换拿法以方便用餐。当叉起食用时,叉子的背面必须向上,不过,如果是舀起食物使用时,叉子应面向上方。
3、欧美用叉的细微区别、欧洲人用餐右手持刀左手持叉,边切边叉,将食物送入口中。美国人则是切每一口食物后,将右手的刀放下,把叉子换到右手,再以叉子正面将食物送入口中。英国人则习惯用刀把食物扫到叉背上,压平后送入口中。种种吃法并无优劣之分,最好都能熟悉运用,则与不同国家人用餐,入境随俗,更能左右逢源。
4、用餐完毕、每吃完一道菜,把刀叉并拢刀锋朝自己,叉背朝下,以4~10点方向并排斜放再盘上,服务员即知可收掉盘子。已设置好的餐具不可随意改变位置,不过如果你是左撇子,在吃的时候可将刀叉互相更换使用。只是在用餐完毕后,餐具必须依右撇子的人的用法放置,将刀叉的柄向右放置于餐盘上,这么做的原因主是要为了不造成服务人员的困扰。
5、叉的巧用。食用米饭、玉米、青豆等小颗粒食物时,可以把叉子反过来当汤匙般使用,将细小食物用刀帮忙聚集在叉子凹陷处,舀着食用。
6、注意事项。中餐吃饭时要端着饭碗,西餐用餐时千万不可端着盘子吃。不慎将刀叉落地,可请服务员代捡,并取一份新的来替换,客人钻到桌下捡拾餐具属于一种失礼的行为。
吃西餐的注意事项
1、就座时,身体要端正,手肘不要放在桌面上,不可跷足,与餐桌的距离以便于使用餐具为佳。餐台上已摆好的餐具不要随意摆弄。将餐巾对折轻轻放在膝上。
2、使用刀叉进餐时,从外侧往内侧取用刀叉,要左手持叉,右手持刀;切东西地左手拿叉按住食物,右手执刀将其锯切成小块,然后用叉子送入口中。使用刀时,刀刃不可向外。进餐中放下刀叉时,应摆成“八”字型,分别放在餐盘边上。刀刃朝向自身,表示还要继续吃。每吃完一道菜,将刀叉并拢放在盘中。如果是谈话,可以不可以拿着刀叉,无需放下。不用刀时,也可以不可以用右手持叉,但若需要作手势时,就应放下刀叉,千万不可手执刀叉在空中挥舞摇晃,也不要一手拿刀或叉,而另一支手拿餐巾擦嘴,也不可一手拿酒杯,另一支手拿叉取菜。要记任何时,都不可将刀叉的一端放在盘上,另一端放在桌上。
3、每回送入口中的食物不宜过多,在咀嚼时不要说话,更不可主动与人谈话。
4、喝汤时不要啜,吃东西时要闭嘴咀嚼。不要辞嘴唇或咂嘴发出声音。如汤菜过热,可待稍凉后再吃,不要用嘴吹。喝汤时,用汤勺从里向外舀,汤盘中的汤快喝完时,用左手将汤盘的外侧稍稍翘起,用汤勺舀净即可。吃完汤菜时,将汤匙留在汤盘(碗)中,匙把指向我。
5、吃鱼、肉等带刺或骨的菜肴时,不要直接外吐,可用餐巾捂嘴轻轻吐在叉上放入盘内。如盘内剩余少量菜肴时,不要用叉子刮盘底,更不要用手指相助食用,应以小块面包或叉子相助食用。吃面条时要用叉子先将面条卷起,然后送入口中。
6、面包一般掰成小块送入口中,不要拿着整块面包去咬。抹黄油和果酱时也要先将面包掰成小块再抹。
7、吃鸡时,欧美人多以鸡胸脯肉为贵。吃鸡腿时应先用力将骨去掉,不要用手拿着吃。吃鱼时不要将鱼翻身,要吃完上层后用刀叉将鱼骨剔掉后再吃下层吃肉时,要切一块吃一块,块不可以切得过大,或一次将肉都切成块。
8、不可在餐桌边化妆,用餐巾擦鼻涕。用餐时打嗝是最大的禁忌,万一发生此种情况,应立即向周围的人道歉。取食时不要站立起来,坐着拿不到的食物应麻烦别人传递。
9、就餐时不可狼吞虎咽。对我不愿吃的食物也应要一点放在盘中,以示礼貌。有时主人劝客人添菜,如有胃口,添菜不算失礼,相反主人也许会引以为荣。
10、不可在进餐时中途退席。如有事确需离开应向前后的客人小声打招呼。饮酒干杯时,即使不喝,也应该将杯口在唇上碰一碰,以示敬意。当别人为你斟 酒时,如不要,可简单地说一声“不,!”或以手稍盖酒杯,表示谢绝。
