色拉油是从国外音译过来的，指的是国外用来拌沙拉和凉菜的油，色拉油要求油的熔点比较低，低温下面也不会凝结。于是厂家把高烹油进行测试，选择那些熔点比较低的种类，比如大豆油等，就做成了色拉油。因此色拉油和高烹油本质上没有区别，只是熔点不一样。色拉油俗称凉拌油，是将毛油经过精炼加工而成的精制食用油，可用于生吃，因特别适合用于西餐“色拉”凉拌菜而得名。
