一瓶普通茅台酒的酿制,经历了30道工序和165个工艺操作环节。茅台制作过程可分为四个阶段,具体如下:
第一阶段:制曲
小麦经破碎,加入母曲和水制成曲胚,用稻草间隔入仓发酵40天后拆曲,贮存6个月后投入制酒生产。
第二阶段:制酒
投料阶段:重阳开始分2次投料,即下沙和造沙。下沙高粱经破碎后加热水润粮,次日加母糟蒸粮,下甑摊晾,之后加曲和尾酒拌匀堆积,达到工艺要求,入窖发酵30天后开窖取醅,再与造沙经破碎、润粮后的高粱拌匀,从蒸粮开始重复上述工序。
馏酒阶段:馏酒阶段共有7个轮次,每个轮次均经摊晾、加曲、堆积、入窖和馏酒操作。制酒过程共经历9次蒸煮(馏),8次摊晾、加曲、堆积、入窖,7次取酒,一年一个生产周期。
第三阶段:贮存与勾兑
基酒(轮次酒)分酱香、醇甜香、窖底香3种典型体贮存于陶坛中,将不同轮次、不同典型体、不同酒度、不同酒龄的基酒进行勾兑,勾兑后贮存于陶坛。贮存勾兑工序至少历经3年。
第四阶段:检验与包装
勾兑后的酒经检验合格后,采用不透明容器包装出厂。
