玉米排骨汤做法
主要食材:猪肋骨,玉米做法步骤:1.首先,我们准备猪肋排500克,剔开以后剁成均匀小块。水果玉米两根切成小段,放入清水中,把表面的杂质洗干净后捞出控水。准备大葱白一段,切成马蹄片,生姜一块切成片,放在同一个盆中,加入几粒花椒去腥去异味,白芷几片备用。2.食材全部准备好以后,我们把排骨焯一下水,锅内烧水,把排骨冷水放入锅中,慢慢加热的过程,排骨更容易析出血水,加入料酒10克去腥,水烧开以后打去锅中的浮沫,煮至没有杂质溢出,我们把排骨捞出控水备用。3.锅内烧油,油烧热以后,把排骨放入锅中,倒入准备好的小料翻炒2分钟左右,把小料炒香炒出排骨中的油脂,排骨经过煸炒,煮出来的汤更加浓白。4.排骨炒香以后,倒入适量的开水,水量没过排骨即可,转大火把水烧开,然后倒入准备好的玉米煮2分钟,2分钟以后起锅把排骨和玉米倒入砂锅中,开小火煨25分钟。5.25分钟以后,排骨已经炖好,汤鲜肉嫩,这个时候我们加入少许食盐、胡椒粉入一下底味,调味品要出锅前再放,不需要太多,以免影响汤的鲜度,搅拌均匀后,即可出锅装盘。
